The greatest care in selecting grapes to make first-class
wines has always been our winery's hallmark. We,
together with a limited number of vine growers and
an exceptional technical team, carefully conserve
our fruit’s integrity. Grapes are picked in
crates with a no-greater capacity than 15 kg and
then, bunches have to go through the sorting table,
a hard test. Next, bunches are singled out and pressed
directly onto the vat with no mechanical help to
be raised.
However, this hard work would not make sense if
after completing the aforementioned tasks, we did
not have
cutting-edge technology in the oenology field:
truncated-conical stainless-steel vats with cooling
jackets, cold units,
pneumatic press, etc.
The best French wood is also selected in order
to support, conserve and balance a wine that
turns into
art. |
